3 years and counting

It's hard to believe that 3 years ago this week Matt and I were married.  Time sure flies when you are having fun, it feels just like yesterday.  We are so blessed to make it another year and I pray God will continue to bless us for our many many years to come.  We were fortunate to be able to join Matt's family for an Outerbanks vacation in mid August; which was our first vacation in two years.  It was an enjoyable and relaxing time but we are waiting on pictures from Matt's father before we can post any.  We had a lot of fun; including jet skiing, running on the beach, kayaking in the ocean, cooking and eating out.  We also had our dogs swimming in the ocean and tracking down crabs on the beach.  They loved it.


Another big thing is this semester I have no more classes- so I am very excited about having this opportunity to get my research done.  I've also been busy training for the past 4 months, as my sister-in-law, Kristin and I have plans to run a half marathon in November, so we have been trying to eat really well.  We tried quinoa for the first time this past week and were suprised that it wasn't half bad.  The past few days we have had
Turkey burgers, quinoa, coleslaw
Veggie soup
BBQ chicken sandwiches, quinoa, steamed veggies
Chicken marsala, fettichine, green beans

Upcoming, we will be having BBQ pork ribs, baked potatoes and corn.  Fish and rice, and probably chicken or steak fajitas.
