First we had to get a new car yikes. This was back in October sometime- my car which was only 4 yrs old had some major electrical malfunctions and we decided it was better to trade it in then end up crashing so we got a new volkswagen.
The other big news is we have switched Matt to a gluten free diet which has been an adjustment and lots of learning. We are basically learning a new language learning what foods are safe to eat and how to make gluten free foods taste like the normal food we are use to. However this allows for a creative atmosphere and lots of new recipe adventures. So far I have made:
- Gluten free beef stew
- Gluten free chicken and rice soup
- Gluten free Chicken stirfry
- Gluten free gravy and cookies
-Gluten free beef and broccoli
The things I will be trying for thanksgiving will be a gluten free stuffing and gluten free pumpkin log so Matt can still have his favorite Thanksgiving treats.
Also made beef shishkabobs which was a good gluten free idea.
Before switching Matt to gluten free he was starting to cook some- here is the delicious french dip dinner he made for us. Yum! Unfortunetly now he can't have the rolls and he has to have gluten free au jus sauce.
For a late anniversary celebration I had gotten us Randy Travis Concert Tickets. He is Matt's favorite country artist and so we went a few weeks ago and saw this relaxing and entertaining concert. Matt really enjoyed it.
