So we have now about 3 or so weeks into our spring semster. My first two weeks of attempting to be back were difficult and my days ended up being much shorter then I had planned and the amount of work I accomplished was really the bare minimum but I shouldn't be suprised when the recovery time for my surgery is suppose to be atleast 6 weeks and I had to be back by 4 wks post op. Now that I'm finally 6 wks out I'm feeling much better, still tired a lot but I'm back to almost my normal self with my normal work hour days and all the stuff I have to do at home. I saw the doctor last week and he said that my all looks all better on the inside, Praise God, and that I will see him in 3 months to check up on both eyes again. So now it's just getting back in the swing of things. So I'm on the right track and just trying to push through and get things accomplished.
One of the things Matt and I wanted to do with the start of the new year/semester once I felt well enough to cook again was to try and see if we can cut out eating out for the next few months except for vday and birthdays. In attempt to save money and eat healthier. So with this I've gone ahead and scheduled the next months worth of dinners which I started cooking this past week and it's a menu that not a single meal is repeated within that time- which took some thought to come up with.
So far this week everything has been delicious and they have all been new dishes.
Monday- Chicken stuffing Casserole w/ side of peas
Tuesday- Seseme crusted flounder-broiled w/ potato/green bean medley
Wednesday - Turkey Chilli
Thursday-Leftovers
Friday- Shepards Pie- probably with turkey or chicken meat
So far everything I've decided to make has tasted great, although things like casseroles, chilli's etc don't photograph well so I didn't include those pictures. But that was my first ever casserole and the flavor turned out really well. The fish and the chilli were also new recipes to try.
I will try and keep you posted of more things we have tried and maybe it'll help anyone else find new ideas for foods in the kitchen as I know after cooking and cooking dinner after dinner sometimes new ideas are hard to come by. But by nutritional guidelines I think it's recommended to have 2 chicken, 1-2 fish, 1 beef, and 1 non meat meal per week. And I try and at least have 1 fish a week as for the rest I'm not sure how closely I follow that. I know in my meal planning I've tried to add more chicken dishes then we probably were previously eating.

Matt hockey
Matt's dad came down to help us for a week and he was able to go take some pictures of matt in action on the ice so I thought I'd share a few :)
New year updates
Just wanted to update everyone and let them know I have recovered well so far from my eye surgery. We are so greatful for all the friends and family who helped us by coming to help us, cooking, praying etc. It's been a blessing for us to feel so loved and cared about and I know it has helped ease Matt's burden of trying to get everything done for me. Now we both start school again on monday and I hope I will be ready for it. We won't see the doctor again for another week or so but to me it looks like it has been healing well and I've been trying to use it more and more each day. It is very tiring to read or us the computer but I've tried to increase my tolerance. Hopefully this semester goes well for us- it'll be another busy one!

Reflections of new years past
In the church's I've always attended they emphasize that each new year has a purpose and destiny and I thought I should write down what I feel some of the past years have been for me at least so I don't forget in the future.
I feel that highschool it's hard to tell because the new year really doesn't change anything in your life since life in highschool revolves around school and therefore the new year to you is the school year. But for some reason I started paying attention to the spirit of the year in college.
But after college is when they seem to start applying:
2008 was a season of accomplishment- I graduated college, bought my first new car got my first time fulltime job relevant to my degree, Matt got back from Iraq beginning of 2008 I believe and started working as a battle skills teacher at the school house and he was so good at it they let him stay there twice when typically they only allow you to stay there once.
2009 was a season of excitement- Matt and I started dating, got engaged and married. I also applied to graduate programs and we started looking at potential cities we could end up living in. We traveled a lot which was also very exciting.
2010 was a season of change- I was accepted into NCSU for toxicology and Matt finished his active duty Navy. We made the big move to North Carolina - both started school and got our first dog, found our great little church and started to make a life here.
2011- was a season of work and challenge- We worked hard over the last year on making a living and working hard on our degrees, not much new happened other then my eye surgery which went smoothly and that I'm still recovering from.
2012? What will 2012 bring? Normally I have a sense of what it will bring before it starts but this year I don't think I spent enough time praying and listening to find out. I know what major things will come in the next year like Matt finishing his AA and me finishing classes and taking my comp exam. But the spirit of the year eludes me thus far. I"m hoping and praying for a year of rest and recooperation for a lot of us. But we burnt our first bayberry candle to bring in the new year and we hope it brings us the luck it's suppose to :)
